Summer squash come in a variety of shapes and textures, but most of us only think of Zucchini, or maybe a Yellow Crook-necked Squash when we think of summer squashes. Personally we are big fans of summer squashes and decided years ago to beat “zuchinni fatigue” by growing better squash. We offer many different squashes, but most of them can be used in similar ways. Some we prefer to hollow out and fill with hearty meat sauces, others have excellent flesh for grilling, some others hold up great to sauteing or turning into zoodles. Of course there is Zucchini bread, adding to soups or eggs, or dehydrating if you are very adventurous.
If you are truly overwhelmed by your summer squash, simply grate it up and throw it in the freezer to add to soup on busy nights in the winter months. Our family loves having cubed summer squash in hearty sauces like spaghetti sauce, or in big pots of minestrone soup.
