While radishes can be great raw on their own, cooking them brings out flavor and sweetness. Until the early 1900’s radishes weren’t commonly eaten raw and were often used in breakfast foods! They are low on the glycemic index, and can be very satisfying cooked….but we do also adore them raw with homemade ranch.
Don’t toss the greens, they are edible too! We often saute them with the roots for a breakfast skillet, or cook them down with garlic to swirl into mashed potatoes.
